Pastry cream, deeply rooted in French pastry since the 17th century, was originally a filling for various sweet desserts. Now an essential, its simple recipe with egg yolks, sugar, flour and milk requires delicate cooking. Its versatility allows it to transform into mousseline cream or serve as a base for elaborate desserts, making it a key element in the art of pastry making.

Evenly spread a thin layer of pastry cream over half of the puff pastry. Then, sprinkle chocolate chips on the cream-covered part (image above).

Ingredients


Puff pastry:

  • 2 sheets puff pastry, from a 17.3 ounce package


Pastry cream:

  • 3 egg yolks

  • 50g caster sugar

  • 35g flour

  • 225g milk

  • 125g whipping cream

Extra:

  • 100 gr Chocolate chips

 

Instructions


  1. Start by preheating the oven to 200°C, then roll out your pre-prepared puff pastry on a lightly floured surface.

  2. For the pastry cream, whisk the egg yolks with the sugar in a bowl until the mixture becomes pale and creamy.

  3. In a saucepan, heat the milk. Gradually pour the hot milk over the egg-sugar mixture, stirring constantly to prevent the eggs from cooking.

  4. Return everything to the saucepan and cook over gentle heat, stirring constantly, until it thickens. Remove from heat, add the sifted flour, and mix well. Allow it to cool.

  5. Spread a thin layer of cooled pastry cream onto your rolled-out puff pastry (you don't have to use all the cream). Sprinkle with chocolate chips.

  6. Next, cut the pastry into strips about 3 centimetres wide. Gently twist each strip to create beautiful twists.

  7. Place the twists on a baking tray lined with parchment paper, apply the egg wash, and bake for approximately 15 to 20 minutes until they are golden and crispy.
